The sun is out, I have delicious salad and I am in a seriously good mood today.
I wonder if those things are related?
Continuing with my new recipe aims, I am upping the salad game this week. So here is a light, refreshing AND seasonal salad recipe, with just the right amount of zing and spice to kickstart your spring evenings.
You will need:
- 1/2 Mango
- 1/2 Avocado
- 100-150g Prawns
- Big handful of rocket (or arugula if you are stateside)
- 1 passion fruit
- 2-3 Tbsp chilli infused olive oil
- 1/2 lime
- Small bunch of corriander
- Chilli flakes
- Salt & pepper
First up – toss the prawns in a lil chilli oil, salt and pepper and pop on the griddle or fry on a medium heat. Turn them over halfway through cooking and ensure that they a pink all the way through before serving.
Whilst they a cooking, make the dressing – chop the coriander and mix with the remaining chilli oil, the a squeeze of juice from the lime, juice and seeds from the passion fruit and chilli flakes. Season to taste.
(Check on the prawns – don’t let them burn!)
Next – toss the rocket in half the dressing and top with chopped mango, avocado and the prawns(How awesome is it when you get the perfect avocado? I know I cant be the only one who feels this!)
To finish – drizzle over the remainder of the dressing and top with extra chilli flakes. I like it spicy so I went to town on this!
Serve with a chilled glass of rosé. YUM.
