In case you haven’t noticed. I love nuts.
Raw unsalted almonds/cashews are my go-to, but I adore all nuts in all forms.
Particularly a nice spicy sweet combo. Yum.
The problem with shop bought spicy nuts is that they are generally jam-packed with sugar and roasted in crappy quality oil. So, while super tasty, they are an occasional treat.
BUT, who needs them now you can whip up a batch of these?
Ingredients are super simple. You probably have them all in your cupboard right now.
- 2 cups of nuts – I went for a cashew, pecan and almond blend
- 1/4 cup of unsweetened shredded coconut
- 1 tbsp coconut oil
- 1 tbsp maple syrup
- 1/2 tsp cayenne pepper
- 1/4 tsp cinnamon
- 1/4 tsp mixed spice
- Salt and pepper to taste
Combine the oil, maple syrup and spices in a bowl and season with a lil salt and pepper.Mix with a fork.In a large bowl, combine the nuts and shredded coconut.Pour the spices blend over the nuts and mix them up real good.Spread the nuts flat on a baking tray. Bake at 150c/300f for 20 mins or until golden. This spoon. Is for licking. The best bit of making anything is definitely snacking on the ingredients.Unless you fancy a burnt tongue, then I recommend letting them cool before tucking in!
The perfect accompaniment to a glass of wine or a cocktail. Enjoy!
